Most GMs resign before the checkmate can be delivered. Are there any games where checkmate was actually achieved in a GM or even IM game?

I've seen plenty, but they usually either came from a time scramble where it was "all of a sudden", or because the losing player thought it was pretty and played it out to be sporting.

Stand by for a Greenpawn34 blog with a pretty one with a neat backstory, I'm sure.

Kramnik got mated by Deep Fritz.

Donald Byrne got mated by Bobby Fischer in the "Game of the Century".

Whilst not quite a GM, I always allow my opponents to checkmate me if it's a quick one. i.e. I won't carry on when it's king and queen vs king just to make sure they know how to do it, but if I missed a forced mate in three then I'll play it out. I know how satisfying it is to checkmate your opponent and if they were clever enough to find a mate which I missed then they deserve the bonus of getting to say "checkmate".

Kramnik's loss to Deep Fritz was highly unusual in that he hadn't actually seen the mate in one! I think he started to wonder off the stage to stretch his legs and had to be called back to be told that the game was over.

I fell prey to an illegal move in my last tournament, and felt like an idiot the next day, but I feel better after being reminded of this. To err is human.

If there was a video of this game, it would have BAM! and POW! interspersed in it like the old Batman TV show of the 60's. I actually caught myself saying those words under my breath as I played through the game.
