How do I change national flag?

As above.

MySettings > MyDetails. Change the country displayed there and the flag will be done automatically.

If you click on 'my time zone' initially to make sure that the given time is correct, you can then go to 'my profile' ( both are settings within the main 'my settings' tab ) to get the full 'checking list' of flags and their countries that are all available for that region...
I think some folk deliberately 'manipulate' their time zone settings on a regular basis, all in order to display as many countries \ flags as they feel fit to display...
Remember there is the 'sod the flag option' also, I'll display an appropriate flag when I represent a country at chess...the chances of doing so are therefore a touch beyond ZILCH 🙂

I tried changing my timezone, but it didn't have any effect on my flag, but changing my country in MyPersonalDetails did. The only way I can get a list of flags is the flag index (access from the Site Map at the foot of each page).

The "no flag" option is also on the MyPersonalDetails page.
