So wish Evelyn was here to reply. Her Naples meatball and sauce recipes

were the best. Unfortunately she never commited them to paper. Sorry,

Is this for spaghetti, or a sandwich, or just meatballs and a side dish entrée kinda thing?

I like sweet Italian sausage cut into bite sized pieces. Braise them until done, then add to sauce, let simmer. ๐Ÿ™‚

I've got 3+ pounds of frozen burger I need to get rolling. No time for sausage.

Mix the meat with black pepper and cumin and serve with yoghurt, Turkish/Persian style.

Phlab, I do remember she included finely slivered garlic, white onion and fresh parsley... formed them

the size of limes, sauteed them in virgin olive oil and then slow cooked them in the Naples red sauce.

I use half ground beef and half ground pork/sausage.

Add one egg and bread crumbs to help bind.

Flavour with minced garlic, diced shallots and onions, fresh oregano, salt, pepper and a heap of grated parmesan.

Mix with hands and roll into balls.

Brown on all sides then simmer in sauce.

Sounds similar. Once I tried to help. Got reprimanded for 'rolling' them too much. Makes them less tender, I think.
