Think about it more intuitively and it will make more sense. Your goal in the game is to protect your king and to kill your opponent's king before he does the same to you.

If you mate him by putting your king in check, then your opponent's next move he would just take your king and you would lose, never getting the next turn you would need in order to actually kill the other king. You would be dead and it wouldn't matter that he would be dead on the next move.
