Was the wine that Jesus made from water real wine?

Did Jesus just pull a fast one and switch wine he bought and the water?

Or are we to assume Jesus is God and could and literally did create wine out of water?

If that wine did originate as water, could a modern scienist figure out the minimum length of time it took Jesus to create the wine?

Come on eladar, everyone knows the guy who turned the water into wine was a stand-in.
