Why do I constantly see about 20 current open invites but there is no way to accept one? An accept game link may appear next to one or two of them,

You are rated about 1250. Look closely and you will see that all the open invites that you cannot accept have parameters indicating that they limited their invitations to those rated higher or lower than you.

Higher would be > 1300

Lower would be < 1100

Suggest you post your own Open Invite - you can specify time controls and rating range. They're usually picked up pretty quickly unless they're exceedingly one-sided.
