If you have a knight extra, you can collect some pawns, then give back the knight to stop your opponent's attack, and still be a few pawns up while positionally equal. If you have gained some development by giving away some material, you have to use that advantage to either storm all over your opponent's king (rarely practical) or gain back the material now, and in doing so let your opponent develop. In that case, you're more likely, unless you're a better player than I am, to gain more material than you sacrificed in the first place, and you'll have to make do with merely a slightly better placed bishop - a much more ephemeral advantage, at least at my level.
