As white, I've been taking NxNc6 for some time now. It might be bad for giving up center pawns and giving black an open b file. But imo black's pawn center is not very defensible in most cases.

SG, yip it sure does but it seems that f6 or (surprisingly) Nf6 are the replies with black coming out on top more often, which I also found surprising

Only had a quick look before I head out, but black should play Nf6 or else risk this sort of games arising. If you start a rapid game by losing a central pawn then can't castle, the future is bleak.
