I've just started playing a few games in Chessmaster and have yet to lose any. Right now I'm at 2025 and I've just beaten Rusty. Now, I really doubt that I'm THAT good, as much as I would like to believe it. For example, here is my game against Rusty (I was black):

Would a 2000+ human player ever play so bad? Rusty's play seems to me no better than a ~1600 player. My own play was no better than a 1600 player. In fact, at the end, I was totally relaxed, there was nothing he could do. How close do you guys think CM's ratings are to real ratings and what are your own ratings in CM?

I think CM ratings - 300 point about should be fairly accurate.
Depends on the timer, Computer speed etc... Powershaker had a long thread about this very same thing.
I haven't played CM 10000 in awhile but several months ago I played Josh at 1600, 2 games with 5 min each. I wasn't playing chess really, just messing around and 1 lost 1 and completely slaughter him in the other after I got made at losing the first one. I suck at blitz though. My 30 min club rating is a patic 1550 so at blitz I must be at about 1300 or so.
I used to play "Kasparov Chessmate" - I still play it just to measure improvement -- I'm currently trying (and have been trying for months) to beat "Alex" In Round 2 of the Gold Cup...He has an ELO around 2040....
The thing is, The program itself gives me an ELO of 1982 - On fritz its closer to 1600 and on FICS 1700 (all same time controls) [approx]
Which is why your Question interests me --- I naturally assumed that the computer program would give more accurate ELO scores because they would have accuratly adjusted the Computer playing strenght for that level...But nowadays after playing Humans I'm not so sure.....although I'd like to beleive I am Close to 2000 I doubt it....
If I was close to 2000 then surely "Alex" would not have beaten me 100 times in a Row...[and still counting].

No, far from it, Kasparov Chessmate is probably about as strong as Chessmaster 10. It's at least 2650 (computer, not human ranking) because it is actually powered by the Ruffian chess engine.
They have updated Ruffian since that games been published....
It now has new and better opening books, etc which my version doesn't have
When you play it you can chose its rating anything from as low as 500 right up to 2300
