(Or perhaps I'll just adopt the latvian, giving me a completely thematic opening repertoire: king's gambit as white against e5, KIA against everything else, KID as black against d4 and latvian against e4... hah! that could be amusing.)

Try opening with E5 against E4. Your C6 opening if fouling you up at the moment. By doing so you also give up the center of the board and don't have the proper knowledge to counter it. Also you don't have to religiously castle right away. Use the tool your opponents are probably using against you, Your recent game database!!!. After each game go back and review what when wrong and use the game history to try a different approach.

That's funny. I have the most trouble against c6 and you have the most trouble with it. I just wish all my opponents played the Najdorf instead.

That might be the thing... I don't know how to play without the initiative, regardless of how much material or position it costs to get it...
