In this strange win, my opponent basically lost the game when he refused to open up his kingside by recapturing my knight. I am confused as to why this is. Is it that important?

No, I believe that if he had recaptured my knight, I would begin to lose thereafter because of the two threats he would have than had against my bishops. The best I could have hoped for would still see me two pawns down.

But for your question, it is very important to mess up the pawn structure but I don't see a way how you could have taken any advantage immediately in that position😕

you didnt miss any move. Qf3 is not a very good move. White has two rooks with no open file. I would prefer black.

I started to think that black can generate some threats against white king since the g file is opened. The bishop pair can be used if white opens ip th elines in fron of the king. If queens are on the board, anything can happen after the variation you gave.
Maybe white will do ok if he opens up the f file. I dont know. I can't give lines like computers but computers can't see the board like me.
And missing a move like Qf3 to win a lowly pawn doesnt make me worse player than you. Maybe it makes me more of a positioanal and patient player unlike you.
Everybody plays different chess, maybe you would like to play me if you are any good 😵
