I have a chess set and a timer at home but I find it really dificult to play anthing like as quickly OTB as I do online. mainly because I keep knocking over the piece. The board I have is about 30cm are they usualy bigger than this. Do pros have this problem of moving the pieces quick enough. I've heared of people play 1min OTB games, to me this seems impossible

30 cm is a little small. I guesstimate that a standard board is about 40 cm per side if you only count the squares themselves, and there is a border around the squares.

Also, your pieces influence this sort of thing heavily. Good pieces will be heavily weighted on the bottom so that they are very hard to knock over.

I seen pro's in action on a chess vid. they dont seam to have any probs moving fast. They use plastic slippery mat type chess board and plastic pieces like this http://www.checkmatechess.com/CW_DetailsList.cfm?ID=700CBS8

These chessmen should be easy to get hold of. But playing Blitz might give you a hernia:
