Hi.
In all the sicilain openings i have studied.
eg..1. e4 c5 2. Nf3 Nc6 3. d4 cxd4 4. Nxd4 d6 .
Why do i never see The white Knight on d4 taking the Knight on c3?
Whats the pit fall?
Hope someone can help.
In sicilian both these squares are for white knights in the opening. If you mean c6. that amounts to loss of tempo as the Ng1-f3-d4-c6 and off the board is never recomended.
V Anand did that in his WC game against G kasparov in 1995, He lost the game (ofcourse for other reasons too)and was criticised in various chess mags
Hope I was able to answer you.

5.Nxc6 bc is a more common move in some of the lines where Black has played 4...e6 (or 2...e6 and 4...Nc6), as White can follow up with e5 gaininng space and restricting the pawn on d7 from moving.
