I tried to do something similar against a friend once. I got to four knights, but unfortunately
he resigned... Shame. I wanted to checkmate him using just knights (no king or pawn
support). If the other player is uncooperative, how many knights do you need to do this?

Just 3.
With 2 the King alone can be mated but only with cooperation
