After 1. Nxf3 gxf3 2. gxf3, White is the only one with any winning chances. Black's king is a long way from the action and the Black knight can easily be chased away by White's king, so I would have played on if I was White. It's almost certainly a draw with "best play".
i also figured i could fight off white's attack well enough to stop him from mating, so it wasn't a bad choice for white to draw either really.

is he not FAR more likely to take my pawn, forcing a final pawn swap (as white I would have done that i think).

All the pawns will get taken in short order, and then there will be insufficient force for either side to force a win.
