after N-f6, blacks recommended first move, white plays B-g5. Now is it possible to avoid this by playing c5 or e6 as your first move and still be able to play a benoni or Benko???

It's only possible if your opponent cooperates.
After ..e6 white can play e4 and get a french.
Nothing forces him to push d5 after ..c5, either. He can play e4 or Nf3 transposing to sicilian or queen pawn game.
People who play an early Bg5 usually don't intend to be lured into benoni systems.
