    Protons and neutrons consist of thre quarks each.
    Does string theory tell us that each quark is a string of its own?

    AIUI there are several different string theories, but at least some of them do say exactly that, yes.

    Anaother question of the same gnegre:

    Are electrons strings too?
    Is it only in the 'classical' theory where electrons are considered being a pointlike particle?
