I believe that Barr and several others in Trump's administration were caught between a rock and a hard place. They were sensible people who knew Trump was a loose cannon who tended to fire people who told him unpleasant truths; they (the "adults in the room" ) stayed on in order to thwart or deflect some of Trump's more ludicrous and dangerous ideas behind the scenes. Barr may have been one of those, up to a point. Barr saw the writing on the wall (that the election was lost), and jumped ship, probably thinking there was nothing much useful he could do after that.
