Most nuns actually don't wear habits. In many cases, what is now seen as a bizarre outfit was originally an appropriate outfit for the times in which it was invented. For example, some habits were simply the clothes widows of the day wore, as that particular order was founded by a widow or many widows joined that order. The rest of the world's clothing changed, but for the longest time the RC Church refused to let the women give up the clothing. That changed with V-II, and orders were encouraged to go back to their roots, including their clothing roots. That led many to encourage their women to wear secular clothing. Those who choose not to are generally those who had it pounded into them for the decades previously that the habit was important.
Very few nuns are cloistered away from the world. Your inability to recognize them doesn't mean they aren't out there at the ball game, shopping, and doing most of the things other women their age are doing. They also are quite capable of having fun, and very few orders require women to wear habits under threat of being kicked out. In fact, in the past decade or so, many orders refuse to allow new entrants to ever wear habits, while they're diligently working on getting the rest of their members to get rid of them instead.
