My synology NAS is getting old and i've started to think about a replacement that will still transcode all my PLEX movies.

Any suggestions? and no i don't want to run rasberry Pi's, invidia shields etc.

It really depends on your budget and how much space you want it to take up and how much storage you want on it.

One option is something like the machine I built for my brother-in-law. It is a barebones ASUS mini-PC, with a Ryzen 7 5800H. I added 32Gb of RAM and a 2TB SSD. The onboard graphics processor is better than I expected.
I gave it a burn-in test encoding 11 hours of GoPro video with a codec that uses the video processor. It encoded the videos at about the same speed as another machine I have with a GTX 1060.
There are options with a Ryzen 5 or 3 or with Intel CPUs (but on-board graphics on Intel CPUs is dreadful)

I have a 2nd machine I built for myself. It is made from 2nd hand server parts. 2 six core CPUs, 64 Gb RAM and 13 HDDs. Probably overkill for what you are looking for.

yes, overkilll i think.

I have a 4 bay NAS with 4tb drives each for a total raid of about 10tb

Just use it for movies/tvshows and a backup for mp3's.
