It is my understanding that all cheeses start basically the same.
The differences in sharpness and flavor are mainly from the tempreture and humidity etc during the aging process.
But from my experience they taste different from one another.
Try some extra sharp cheddar and then some colby,then say they taste the same.lol

applewood smooked cheese its quite mild but tastes excellent.

How many of them have you tasted? I've only had a few different types of cheese but they can be very different.

well lets just start with ewe's, goat's and cow's milk ... are they all the same

I THINK NOT

and I suppose the Mongols and Berbers make cheese from the curd of the Yak and the Camel too!

but there's not much call for it round here according to Mr Wensleydale.

Well there are some diffrences in the start for example chesse made from cows milk, goats, yaks, rats, dog, sheep, buffalo.
