They've been around quite a long time.
The name is a mythological Norwegian demon, I think.
I only have one Dimmu Borgir album, Enthrone Darkness Triumphant. I don't know what the name means, but it probably has to do with something demonic, troll-like, or necro. It's part of the reason why I never got into the whole black metal thing. It's so wrapped up in its own image that I think a lot of these guys (Borknagr, Emperor, Vintersorg, etc) have lost track of the music.
Dimmu is a pretty cool band when stacked against the other nonsense in the sub-genre, but like most of the black metal, the sound is pretty monolithic. If you've heard one song, you've heard them all. Straight sixteenth note riffing in E or F minor, which the bass player downpicks, the keyboard player just outlines the chords (and plays a strictly chromatic solo), and the drummer plays some fast double bass. Throw in some Satanic lyrics and dress like a troll and wear corpsepaint, and voila...it's Black Metal!
But, if you do like the sound, just say so, and I can point you to some black metal that is a little more original.
That being said, if you get a chance to see them live, definitely GO. They played Seattle a year ago and it was so goddamn heavy I think I left my entrails on the floor of the club.

If you like operatic female vocals in a heavy context, try a Finnish (I think) band called After Forever. They mix the black metal up with an UNBELIEVABLE female vocalist, making for quite a unique listen.
I haven't investigated the doom sub-genre enough to offer any solid advice, though I have read good things about My Dying Bride and Theater of Tragedy.
I'll let you know if I think up any more.
