This is one of my favorites
Chicken Adobo in Coconut Milk
Ingredients
2 tablespoons garlic, minced
1 onion, chopped
2 tablespoons olive oil
1 whole chicken, cut into 8-10 pieces
3 cups coconut milk, divided
1 teaspoon ground black pepper
1/4 teaspoon salt
1/4 teaspoon fresh ginger, grated
3 tablespoon vinegar
1 small piece chili (optional)
In a soup pot, saute garlic and onion in 2 tablespoons olive oil. Add chicken pieces, 2 cups coconut milk, black pepper, salt, ginger and vinegar. Bring to a boil and simmer uncovered until chicken is very tender, about 1 hour and 10 minutes. Add chili (optional to taste) to make dish hot and spicy. Add remaining coconut milk, stir and simmer 2 to 3 minutes until sauce is thick and oily. Serve hot over rice.

I made Naan bread tonight to go with a spicy Hungarian goulash (yeah, Indian and Hungarian food can go together). I've used this recipe for some years, so can heartily recommend it.

Edit: And I don't eat wild birds. The most prevalent bird in the US is now no more ie the passenger pigeon. The bison were nearly hunted into extinction and the heaviest flying bird - the corey bustard in southern Africa - is endangered, Unless it's a renewable resource, I won't touch it.
Don't know if you blokes get avacados in your part of the world but
right now I made a snack, Guacamole: avacado, couple three
smushed up in a nice goo, add picante sauce to taste, hot, mild,
whatever, maybe thin it down with a bit of sour cream, then use
Tostada chips and dip away. I am washing it down with some
earl grey tea. Its all very filling and yummy. I worship avacados.

This is not an ethnic recipe, but it's ethical π: Mash an avocado, mix with curd cheese (sour cream works too, if you can't get curd cheese), garlic, herb salt and pepper. Eat with pasta or potatoes.

in norway? It was interesting to me, I went on holiday to a smallish
lake above Toronto and knowing avocados cost about $1.50 to 2 bucks
each here near Philly, I saw this open air farmers market in downtown
Toronto(my kid does BMX biking and likes all the places to grindπ)
So I find this bin with avocados in it, nice fresh ones, Haas to be
exact. So I asked how much: about 25 cents american. I'm going
HUH? Ok, lets see here, Toronto is some 4-500 miles north of me and
there aren't too many of them grown in either Philly or Toronto,
so down in Florida where the last vestages of the huge groves we
had in California (when I was a kid there, in avocado country we used
to buy them for a dollar a BAG, big bag at that). So there they are
in Mexico or Florida and get put on a truck going north. Stop in Philly
and Allentown near us, charge 2 bucks each. Now go north another
500 miles, set them out for sale for a quarter. Whats wrong with this
picture?
