I've got into a 'bacon wrapping' mood recently, salmon fillet with mascarpone cheese wrapped in bacon is also pretty tasty, add a touch of dill to it for added awesomeness

It's amazing how many things can be improved by wrapping them in bacon (or parma ham - I probably do that more often).
