I uncovered a similar scam in American scallop fishermen. Scallops are a salt water form but the fishermen soak them in fresh water which is a bit denser so the catch comes out heavier.
I found that out on vacation to Digby Nova Scotia, the official scallop capital of the world. They leave them in salt water and they weigh less but Digby scallops are the best I ever had. There must be a dozen scallop restaurants in Digby. I never had scallops that tasted so good.
When scallops are soaked in fresh water they get heavier but they also get a more bitter taste.
