Rinse fish.

Mix a little milk and egg like you were making French toast or scrambled egg in a bowl.

Dip fish, throw in a bag with the Potato Mix and shake.

always preferred a self raising flour batter myself but that does look pretty nice.

What the hell are you talking about?

It's not really a 'batter'. It's flaked on... You soak the fish, wipe it off and shake on the flakes. Just a crust, not a 'breaded batter'.

You want me to blacken my next fish? Me afraid of flavor? Come one man, you know better than THAT!~

seriously though, it wouldnt hurt to add a little salt and white pepper to the egg wash.

Salt is overrated.

A nice light fish should not need seasoning, it just covers the flavor.

Instead of pepper, if I want spice I'll dice up some fresh serranos and add them. Yummy!
