Every time i try to phone someone with my MSN live call, i get an attempted intrusion alert - "invalid UDP destination port".
Is this just because my Security system doesn't know my Live call yet, or is it something more sinister ?

Most firewalls and security systems are defaulted to close access for all TCP and UDP ports.

Check which UDP port MSN Live is trying to use and then make sure it's allowed/open in your security settings.
