Hrm, IDK, I've never been in his situation - surprised it's a guy too, tbh. Why does it bother you that he is? Because you have to make him different foods? I don't really understand vegetarian logic, so I'm not sure I can help you.

OK...I get the message, but why should his food choices affect my happiness? Is it fair that a vegetarian can deprive the carnivores of the house of meat products in the household just because he does not care for it? Carnivores to vegetarians=2/1 shouldn't the majority have a say in the food decisions?We have to tolerate him, why not he us?
