On the plane coming back, I daydreamed about slitting the little lamb's throat myself... I'M BACK!!!! style. But when I arrived at my sister's house, they'd already cooked it.
When we make burgers I use a 30/70 lamb/beef mix. It's absolute magic.
Same thing for bolognese. Next time you make it, try a mix of roughly 60/20/20 beef/lamb/pork. It's amazing.
This also means that you will probably have to get your own meat grinder, if you don't already have one. Please stop buying minced meats, do it yourself so you can be sure what's going in there...
