Ok, serious question. I actually don't know the answer to this.

Normal, average shot glass. Fill it to the rim.

How much is that? 2 shots? more? less?

Edit: Bah, I did learn something. It appears that this depends on where you are in the world, as different countries have different standards for this.

It appears that in the US, at least, a standard shot glass holds 1.5 ounces. Another problem is that what a place calls a shot also differs, but it is usually either 1.0 ounces or 1.5 ounces. This also means that a double is either 2.0 ounces or 3.0 ounces. I have a couple of measuring shot glasses that hold 4.5 ounces to the rim, with markings for each half-ounce. I call these glasses "dial-a-drunk" since you can measure out exactly how drunk you wanna get, instead of leaving it to semi-chance.

from what I always assumed
a shot glass should hold only enough to drink in one gulp

And here I thought I was the only one to actually use a "shot glass". Most of my acquaintances use the, "An ooooounce and a half" technique.

And that's why, in the US at least, a shot glass is an ounce and a half.

Getting a bartender to fill them up is another issue entirely.

imagine my surprise when they told me that a blender pitcher of margaritas wasn't the same as a shot

Hahaha... we used to make blenders of strawberry daiquiris in school. Once I started early and no one showed up til late and I had finished it off by myself by that time. I don't remember much after that until trying to go to class the next day. That was a no-go.
