Sometimes, big clans from little clans grow. See the parable of the sower for an effective analogy.

True true. My clan had only one member for three months (me) before it grew exponentially and spawned the greatest clan franchise in RHP World History!

The most obvious part of a clan seems to the point being missed. Every single clan starts with one person

That being said, I don't feel that a one person clan can really be considered a clan by definition. People browse that pages and find one they are intersted in. I do agree that there are way to many, but they have to start somewhere, and they all start with just that one person

Smiffy's Pawn Stars Clan 24434 founded on 1 january 2006 has now 20 members and is on clan page 8 from the 12 pages.
So everything is possible.

Personally I find it difficult to see what's the problem with such challenges, a game is a game, but if it bothers you for some reason, why don't you ask your clan leader not to give you games against one-man clans?
