Jokes are often aimed at the steriotype of a group. Steriotypes for Muslims/Jews/Blacks/homosexuals are well known (in the West), whereas caucasion steriotypes are rarer. Because of this jokes aimed at caucasions tend to specify a small subsection of society for which the steriotypes are known.
If you were to start your joke "a caucasion walked into a bar..." everyone would conjure a different image of said person so the joke probably wouldn't work. If you were to say "a blond walked into a vbar..." people automatically substitute 'blond' for 'stupid' and therefore will follow the line of the joke
Outside of Western society I'm fairly sure there will be jokes aimed at caucasions as a whole because their view of caucasions will be narrower and the steriotypes mroe solid in the peoples minds.

IMO it would easier if we accepted the last option, that all humanity is one race, but some people won't accept that, so we end up with all the problems associated with classifying ourselves and each other into different races.

Red heads get the short straw because they are a minority. But there are studies that red heads truely do have shorter tempers; some suggest that this could be linked to neanderthol genes. Does this lend credability to the fact that a physical trait really can be an indicator of a mental one?
