Mexican breakfast nr. 2



Huevos con chorizo

I think it will be quite impossible to get real, fresh pork chorizo in your countries, but try to get as close as you can. It's like the Spanish one but with more spices and fresh, not fried.

Fry 1 can of jalapeño chiles with chopped garlic and onion in
non-olive oil, preferably animal grease oil, and scramble in it
1 minced chorizo and after a few minutes of frying add 2 or 3 eggs.
DO NOT SCRAMBLE THEM badly, like in McDonalds or that crappy way.
Just break the yellow of the egg and wait 1 minute, and then move
a little the eggs, and then 1 minute, and so on until ready.

The perfect spices for this is plain salt, comino (what is it in English?)
and white pepper.

Once that is ready, warm as many flour tortillas as you can, make
quesadillas (melt cheese on top of the warmed tortillas) and place
the scrambled chorizo & eggs in them... make your tacos, and eat.

This one does not go well with beer. Try it drinking fresh pineapple
juice, for example, or even chocolate milk.

A knock out.

I'm sure the Costa Rican breakfast is the same with some minor differences but I absolutely loved the food. The best I've ever had, actually. Having flavor in breakfast food is somewhat dulled down here in the states with breakfast. Everything is just a heap of carbs and fatty meat. You feel like sleeping for a day after you eat it, and yes, the portions are HUUUUUUGE.

Typical:

Cereal (mostly sugar)

OR

Pancakes or waffles
Eggs
Sausage/bacon
Fried potato
Toast

I like that "steel cut" oatmeal from Ireland that comes in the white can. I could eat it every morning if it didn't take so long to cook.
