open invites

When you go into Open Invites, some players have "accept game offer" in blue letters. How do they manage to do that please?

Those are the only ones that you would be eligible to accept.
Take a look at the rating limits column.

You'll be able to once your rating isn't provisional anymore (i.e. after you have finished twenty rated games).

Use the ''Advanced Options'' link, just above the ''Start Game'' button when you make a new game.

It's not there for provisional players.

How do you claim a win when opponents time has expired?

Click on the skull.

Though I don't think it appears for games which aren't part of tournaments/leagues/sieges until it reaches the third move (whereupon it can be rated).

Use the bin instead.
