What does it mean to have a set piece game? When I go to New Game, and click on advanced options, it lets me click on a set piece button and says that those games are always unrated. What is a set piece game?

It's a game where you can choose what position to start from. It's useful if you want to practise a specific opening or endgame, for example.

even after moving just one/two move ,if , one wants to delete the game (say, due to late movements of the opponent) without getting the credit of loosing the game then what should he do?

If the game has only just started, the "My Games" page will show a "Bin" icon that will delete the game.
