Generally speaking - exchange of kings fianceto bishop may lead to serious weakness of your kingside. There are some gambit lines where white gives up exchange for that bishop. For example this one:

What about 6.Nxf7!? (instead of 6.Bxb7) Kxf7 7.Qe5 Rg8 8.Re1 with Bd5+ to follow? If 8...Be6 then simply 9.Qxc5 (with Ne5+) and black position looks at least doubtful.

what about 8...g5 with the intent of ...Kg6 or ...Rg6(whichever is more feasable depending on whites play.)?

8...g5 9.h4! gxh4 10.Qxc5! (with threats like 11.Bd5+ and 11.Ne5+) fxg3 11.Be3! gxf2+ 12.Kxf2 and black will lose piece.

He'll still have a rook and two pawns against two minors won't he? or am i missing something?

Compare activity of white and black pieces. I doubt if any strong player would want to play that position as black.

Ah. I missed 13.Bd5+ after 12...b6 I thought white had to trade queens. but what about 11...b6 instead of 11...gxf2+ (the move order change is important since Bd5+ isn't as potent here.)

Also trading of queens will not solve all problems as white minor pieces are more active than black rook and pawns. Position after 11...b6 12.Qxd4 Qxd4 13.Bxd4 Rad8 14.Ne5+ is obviously better for white. Black will have to fight for draw.

P.S. Maybe 12.Ne5+ Ke8 (12...Kf8 13.Bh6+!) 13. Qxd4 is better.

I don't think so. For example, 14.Ne5+ Kf8 15.Be3 gxf2+ 16.Kxf2 Rd6 and then he marches his h pawn and white is fighting for the draw. edit- lost on what to do if Ne5+ first but am tired so will sleep on it.

"White is fighting for the draw" made me laught 😀 After 17.Bf3 you will have no chance to move your h-pawn. After 17...Bxd3 18.Rc1 white rook will go to c7 with idea to grab queenside pawns and move a pawn.

17...a6 18...b5 disclaimer: I'm not trying to argue for arguments sake, I am just trying to pick your brain and maybe learn a thing or two.
