Who wants to tell me: a) how I should have defended after the exchange sac, and b) whether there was a win on the board somewhere after taking the knight on move 48? (I offered the draw after I concluded, from calculating about a dozen lines, that I couldn't keep both the pieces, AND take both the q-side pawns, AND hold off the kingside pawns.)

Your king two move trip starting with 49th move was a waste of tempo. White can not promote easily here. So you should've dealt with his queenside pawns first and then switch to the queenside with your pieces.
I would do that, put vacation flag and try to learn that crazy mate pattern 😛
