I've noticed most strategy books I come across are geared toward white (King's Indian Attack, Queens Gambit, etc.)
I play only as black because I enjoy flipping the script on the unsuspecting.
Can anyone please point me in the direction of a good offensive defense strategy for black?
A book rec. would be wonderful. Thank you.

I would personally advise you to play everything. Kasparov won games as both black and white not because of the opening but he knew what to do after the book line ends. Getting a book on how to beat opening xyz will not get the bull off the ice.
I've said it before and I'll say it again, play solidly anticipating your opponents moves and you will be amazed how far you can go.

I already do all that which you witfuly suggested, but still am trying to push through 1300 in a comeback from my 1100.
Regardless of the fact that I havent played as white once since I've been a member, that naggingly low rating of mine shows that, though I've been playing since a child, I am still an amateur.
