i really love Mike Basman's Chess Openings book. It doesn't bombard you with a whole ton of variations but instead is based on concepts.
He then goes through a recommended small selection of openings for white and black including the queens gambit, nimzo indian, morra gambit, guiocco piano, sicilian etc. Traditional openings but with (relatively) easy to grasp ideas.
If your after a more modern overview then Kallai's 2 volume basic chess opening books are very good though they have quite a number of variations that need to be played through for each opening and it's up to you to decide which openings you will play.
I'd also recommend Seirawan's Winning Chess Openings for an easy to read opening compendium though he doesn't go into much depth on each opening but just covers the main lines for a few moves. But it is well written.
I have yet to try Fine's Ideas Behind The Chess Openings but it's meant to be very good.
