I, too, am a high school chess coach. My top player has a provisional USCF rating very close to 1600 (just beow mine). He has improved something close to 400 in playing strength over the past year. He has done this by reading chess books and playing nearly every day. He also started playing in USCF tournaments, while he had previously played only scholastic. (In the Pacific Northwest scholastic evants are not USCF rated--there is a separate NWSRS system that keeps all but the most serious scholastic players out of the USCF, where scholastic players generally drive the ratings down, and scare away many adults.)

If he continues playing and studying, he should be over 1800 within the next year.

I started about 1500. Then I went to 1800's uscf, after not playing for twenty years, not playing and not studying, not even looking at a chess set.

I think that if you take your time in the games, you may win enough games within a few months to get to 1800. 😀

Personally I have doubts that I could make 1800 with studying 🙁.
