I can't seem to castle long or short while playing any of the matches, which pieces and are there any special rules that I must know in order to do this?

just move your king,
your rook will magically do it afterwards

Which side that you castle on depends on which side of Queen/king is geting the least amount of attacks. You sould not castle on the side that is being stormed with a series of atacks from your enemies piececs.

I was reading Korchnoi's autobiography at the library. Amazingly, late in his career, in a game against Karpov, he had to ask whether it is permitted to castle when the rook is under attack. The answer is 'Yes.'

If your king is under attack, or any of the squares it has to pass through are being guarded by your opponent's pieces, castling isn't allowed. Otherwise, as Flexmore said, just move your king.

Just to add to dyl's list, you also can't castle if your king has already moved in the game, even if it's back at it's original position. Or if the rook on the side where you're intending to castle has moved (even if it is back to it's original position)
