    So I've been sold on the Dutch Defense as my response to 1d4, responding 1...e6 instead to allow the possibility for them to transfer into the French Defense. What other possibilities does white have besides going into the Stonewall Dutch or French?

    I play differently against it, but I open with 1.c4 which gives me some additional options.

    Against 1. d4, I'd say not much.

    Polish Defense 1.d4 b5 2.e4 Bb7 3.Bd3 e6 4.Nf3 a6 5.0-0 Nf6 6.Re1 c5 7.c3 is one line.

    Benko Gambit 1.d4 Nf6 2.c4 c5 3.d5 b5 4.cxb5 a6 5.bxa6 Bxa6 6.Nc3 g6 7.g3 d6 8.Bg2 Bg7 9.Nf3 0-0 10.0-0 Nbd7 11.Re1 is one line.

    i play with same idea, except i play on the other side with 1. ... c6 allowing a Caro-Kann transposition or a Slav game...

    You're missing the point, and from your name, I'd think I might want your advice. I plan to play black and open 1.d4 e6

    They can play 2.e4 and go to a french defense, 2.c4 and go into the Dutch. What other options does white have that I should worry about?

    Nothing mainline.

    Thats the beauty of 1...e6 it actually limits white's options with regards to major openings. I suppose there is always the option to go off-book with some weird passive moves but thats about it.

    So:

    2. e4 = french
    2. Anything - Dutch.
