1 d4 e6
I think this has the potential to be a good opening choice for black as it offers many possibilities and does not give in to the pressure posed by the white queens pawn advance almost making it worthless.
what do you think? I am only an intermediate player and would like some advice on this opening by some experts as I can't find too much on it...
I am considering using this regularly, any advice would be helpful.

i like Nf6 because it doesn't allow white to occupy the center with whites e pawn

I also play e6 against d4. I'd say it's most important to learn the Nimzo/Bogo Indian to reply against 2 c4 and the French to reply against 2 e4.

The opening, 1. d4 e6 2. e4 b6 does not have a name as far as I know, although if you like the type of positions that arise out of it I suggest you play it. Another option would be 2 ... d5 which would be the French.
