I'm assuming you're playing in the U.S. The USCF rule book gives the details, and it's a rather lengthy discussion.

That's generally true, but there are other factors that can influence the pairings. You can't play anyone twice (unless the number of rounds is greater than or equal to the number of players), and you're not supposed to have the same color three times in a row. (There may be other factors/exceptions, like I said, I'm not an expert.)
And remember, the pairings get recalculated after each round is played.

I'm not sure that's predictable, as numerous things can happen in the last two rounds.
I forgot to check the results and see who played who.
Thanks for helping out though. The second last game is about to start and I have had 3 hours of sleep. The night before I only got 3 hours of sleep too. I can never sleep in hotel rooms, for some strange reason. I wouldn't call my 3 hours each night "sleep"...more like a deep daydream. Good thing for "5 hour energy" it really works. (product placement 😉 )
You should not bother trying to work who you will get next.
it will drive you potty.
Go with attitudde that you will just beat who ever they put in front of you.
Now some clay head is going to say;
"But I want to prepare aginst my opponent...." 🙁
Then get a second to do that for you. It's what the strong guys do.
It's also the reason they like to only play in these 'closed fix round' tournaments
they know who they are going to play and when weeks/months in advance.
They don't do weekend tournaments, too much like hard work.
Hated hotels rooms as well.
Try jumping into bed with a book on endings, that soon had me nodding off.
