When 1. d4 d5 2. c4 d5xc4 3. e5 has been played, what is the best response for black in this position?

You mean 3.e4 I think. Black has plenty of choice, depending on what kind of game he wants.

Nf6 is the obvious response (after 4.e5 then Nd5)
Nc6 is also very good.
So is c5!
But 3....e5 is very interesting. Check out the game 86325 I had against Islanddoc last year to find out what type of game this brings.

You can also have a look at b5. Looks unconventional, but can be interesting.

Sorry, I ment 3. e3 😕 I already made the move when I posted this, I thought it was Nc6, many thanks for your response, you played a nice game against mr. isle, strange that he just gave away his bishop...!

Of course, 3.e3 is totally different. Nc6 is not the most obvious response to that. e6, e5, Nf6, c5! are some of the alternatives.

The game with Islandddoc: he didn't just give away his bishop. He had to give it for some counterplay (two pawns). If he left the guard of square b8, then Rb8, and after a queen move, Rb1 was devastating.
