what about 1.Qa8+ Kg7 2.Bxe5+ Qxe5 3.Qh8+ Kxh8 4.Nxf7+?

but that would be queen and bishop for queen, rook and pawn. By a point system wouldn't you rather trade rook and two pawns for a knight?

No.

My variation leaves white a knight up in a simplified ending that's easily winning - the knight would simply round up all of black's pawns and leave white with a trivial task.

How does white win two pawns anyway? I don't see it
