I simply think people who do that take losing very personally, and are, in fact, mad at you for beating them. Thus, instead of resigning like a gentleman, they let their time run out just because they know it makes you upset.
This is definately a very jerky thing to do. We come accross jerks every day is all walks of life, and the best thing to do is write them off. If they upset you, then they win, right? There are a couple folks I won't play again because of this.

I've come across it many times in blitz and I don't understand why it's such a big deal to admit defeat!
you've destroyed them completely when they do something stupid. take it as a mental win. savour the sweet taste of victory.

Why bother?
If you're upset, and that's what they want, they've won, have they not?
So don't be upset, and you'll win.
.. left me confused!
