Decided to go a bit crazy with this, anyone got any idea on how strategy might be applied to something like this?

For The Game involving only Knight I would recommend that pawn development and structure are key. Knights are not very good at defending squares because they can't move and still defend the same square. So make your pawns defend each other. I would recommend pawn thrusts supported by knights and try not to get isolated pawns because they will quickley become targets. 🙂🙂

Such Knight houses should be centralized. Ideal spots would be King and Queen 4,5 and 6 (d & e 4,5,6 for White, or d & e 5,4,3 for Black).
Targets are going to be backwards Pawns. To attack these, you want Knight houses within range of these Pawns. To defend these, you want to prevent these houses.
Exchanging a Knight further from the center and advanced center squares (K and Q 6) for one closer to those squares will be a good trade in general. Trading a Knight that has no house for one that does is also a good trade.
The basic strategy will be to entrench as many Knights in the "sweet spot" as possible, and back them up with other Knights so they can't get exchanged off. Limiting the opponent's mobility with Pawns will be crucial.
The question about what you can promote to is very important.
