Sound transition to middle game...check
Surprising material advantage without (seemingly) positional dis-advantage....
F' around for a bunch of moves till I get crushed by a clearly better player......

so I know my final mistake and I think gxf3(where ever the heck it was played) might have been a bad idea...but short of that what should I have done?

You won the exchange, but your two Rooks lay dormant for the whole game. You needed to get them into the fray somehow [trade pawns on Q-side to open files there, for example].
