I always offer 2 games to opponents, yet many of them delete 1 of the games , wonder why ? thought it was fair to play 1 game with black and 1 game with white; but quite a few opponents don't want to play the white pieces, strange?

Maybe they don't like rematches. I myself don't really like to play rematches.

I usually don't mind playing 2 games with the same opponent (hell I have to do it in ICCF tournaments anyways...)

Yes but it;s not really a rematch as you play the 2 games together.
